Nothing says Christmas more than Christmas cookies! Kicking off my first festive bake of the season with White Chocolate & Cranberry Cookies! These are the softest cookies, they just melt in your mouth, my favourite kind of cookies! The white chocolate and cranberry is a classic combination and works so well. The little touch of spice in here makes them feel so festive!
Makes 12 cookies -
Ingredients -
75g unsalted butter, softened
75g caster sugar
75g light brown sugar
1 egg
175g self raising flour
1/2 tsp cinnamon
100g white chocolate, chopped into chunks
50g cranberries
Method -
1. Grease and line 2 baking sheets, preheat the oven to 180 degrees C/Gas Mark 4.
2. In a large bowl, cream the butter and both sugars until light and fluffy, then beat in the egg.
3. Fold in the flour, cinnamon, chopped chocolate and cranberries until a dough forms.
4. Please tablespoon sized balls of dough onto the baking sheets, allowing room for them to spread. Bake in the oven for 10-12 minutes.
5. Cool on the baking sheets for a couple of minutes before transferring to a wire rack to cool fully.
