I'm a massive lover of an apple cake, but this is the first one I've made with cider in, and I thought it added a lovely moistness to the cake, the recipe is super easy and is really delicious. I used the recipe from one of my Great British Bake Off cookbooks.
Makes 1 medium cake
Ingredients -
175 g unsalted butter
175 g light muscavado sugar
3 eggs
250 g self raising flour
100 ml cider
500g eating apples
Icing sugar for sprinking
Method -
1. Preheat the oven to 160 degrees C/Gas Mark 3. Grease and line a 23 cm springform tin. Beat the butter together with the sugar until light and fluffy. Gradually add the eggs, mixing after each addition.
2. Sift the flour and gently fold in using a large metal spoon, add the apples and cider when the flour is partially mixed.
3. When thoroughly combined, spoon the mixture into the prepared tin and spread evenly. Bake in the oven for about 1 hour, until the cake is brown.
4. Remove cake from tin and leave to cool on a wire rack, or eat while warm. Dust with icing sugar.
that looks so nice :D I've become obsessed with baking and watching The Great British Bake Off recently, so I might give this a whirl!
