Recipes are definitely my favourite posts to do, although they're not great on the waistband! This is a recipe I've been meaning to do for ages, I made it a while back and my mam and boyfriend loved it and requested it again. I think that's why I didn't post the recipe the first time around, I didn't photograph it before it disappeared! Honestly this is the most indulgent recipe, if you're a cookie person, this is for you! It's also really nice warmed up with cream or ice cream! You can also make this in a skillet, I think this is more of an American thing, but I just made it in a cake tin! 

Also while mixing the dough you will need some serious elbow grease if you're doing it by hand, I had a real Princess Diaries moment, you know where he's brushing her hair and the brush handle breaks off...yeah well I broke my wooden spoon in half...

Ingredients - 

240g unsalted butter, softened
200g granulated sugar
100g brown sugar
2 tsp vanilla extract
2 golden syrup
2 eggs
340g plain flour
1 tsp baking powder
1/2 tsp salt
100g dark chocolate chunks
100g milk chocolate chips

For the sauce -
100g dark chocolate squares
3 tbsp double cream

Method - 

1. Preheat the oven to 180 degrees C and grease and line a 9 inch springform cake tin. Mix the softened butter and both sugars until combined and smooth. 

2. Mix in the eggs one at a time and beat slowly. Add the vanilla and syrup and stir until just mixed. 

3. Add the flour, baking powder and salt until incorporated. Mix until a dough forms, stir in the chocolate chips and chunks. It will be very tough to mix at this point. Set aside. 

4. In a separate bowl, melt the chocolate and stir in the cream until a sauce forms. 

5. Press half of the cookie mix into the tin, then pour over the chocolate sauce, then finish with the other half of the cookie dough. Smooth it all over with a palette knife so it’s even.

6. Bake for 25-30 minutes, cover in foil for the last 10 minutes of baking to stop the top getting too brown. Wait until to pie cools before cutting into slices. This should keep it for around 5 days in airtight container.
