Recipe | Cranberry & Orange Madeira Cake


The other day I bought a springform tin and had been wanting to give it a go. There were a few oranges in the house so I scanned my recipe books looking for something to make. I decided on this Cranberry & Orange Madeira Cake from The Clandestine Cake Club Cookbook. I was lucky enough to have all the ingredients in the house already!



Cranberry & Orange Madeira Cake 

Serves 10-12 

Ingredients - 

360g Self Raising Flour 
1 tsp Baking Powder
150g Caster Sugar
200ml Vegetable Oil
1 tsp Vanilla Extract
200ml Freshly Squeezed Orange Juice
Grated Zest of 2 Oranges
3 Eggs
50g Dried Cranberries

Method - 

1. Preheat the oven to 200 degrees C/fan 180 degrees/gas mark 6. Grease and line a 23cm round, springform cake tin. Sift the flour and baking powder into a large mixing bowl and set aside. 

2. In a seperate bowl combine sugar, oil, vanilla extract, orange juice and zest and eggs. Mix together with a wooden spoon until fully combined. Be careful not to over mix. Add the cranberries and stir. 

3. Pour the wet mixture over the flour and fold in slowly until thoroughly combined. Pour the mixture into the cake tin, spreading it evenly. 

4. Bake for 40-45 minutes, until golden brown and a skewer inserted into the centre comes out clean. Leave to cool in tin for a few minutes before turning out onto a wire rack to cool completely. Once cool dust with icing sugar.
