I'll be honest, I don't have a love for beer, but my boyfriend is a massive fan and loves trying different brands. When an Alhambra Beer gift chest arrived on my doorstep I knew my boyfriend would love it! The chest included 16 bottles of the beer, which my boyfriend described as light, full of flavour but not too bubbly. My mam also loved the taste of it, it's different from your run of the mill beers. The chest also came with 3 gorgeous beer glasses with the logo on, I thought this was super special, there was also a gorgeous velvet feel photo book featuring the beer making process.
Alhambra asked me to create a tapas recipe, perfect to enjoy with the beer, I decided on a Artichoke & Onion Paella, read to the end of the post to find out how you can win your own heritage set of Alhambra Reserva 1925 beer!
Serves 2
Ingredients -
2 tbsp vegetable oil
2 onions, finely sliced
2 garlic cloves, crushed
200g/14oz paella rice
1 tsp ground turmeric
1 tsp smoked paprika
400ml/1 pint 7fl oz hot vegetable stock
1 tsp finely chopped fresh rosemary
100g/7oz cherry tomatoes
150g/5½oz fresh peas
1 jar of artichoke hearts in water, drained and rinsed
Method -
1. In a frying pan, heat a tablespoon of the vegetable oil over a medium heat. Add the onions and garlic and fry for 2-3 minutes, or until softened.
2. Add the paella rice, ground turmeric and smoked paprika and stir well to coat the vegetables in the spices.
3. Add the hot stock and chopped rosemary and bring the mixture to the boil, stirring well. Reduce the heat to a simmer and simmer the mixture, stirring occasionally, for 18-20 minutes, or until the paella rice has absorbed most of the liquid.
4. Add the cherry tomatoes and peas and continue to simmer for a further 4-5 minutes, or until the rice is just tender.
5. Top with artichoke hearts and serve!
