I'm a total banana cake lover, I make it so often that I thought I would try one that was a little different! I used a Mary Berry recipe, no surprise there! I thought that it turned out well, maybe a little well done on the sides, which you sometimes get with loaves, but it's not a big deal! It tasted lovely!
Ingredients -
225 g self raising flour
1/4 teaspoon grated nutmeg
100 g butter
225 g bananas
100 g caster sugar
zest of 1 lemon
2 eggs
6 tbsp honey
2 tbsp honey to glaze
Method -
1. Preheat the oven to 160 degrees C/Gas Mark 3. Grease and line a loaf tin.
2. Measure the flour and nutmeg into a large bowl and then rub in the butter using your fingertips, until the mixture resembles fine breadcrumbs.
3. Peel and mash the bananas, and stir into the flour mixture, along with the sugar, lemon zest, eggs and honey. Beat well until evenly mixed. Spoon into the prepared tin.
4. Bake for about 1 and 1/4 hours. Cover the teabread loosely with foil during the end of cooking time if it is browning too much. Leave to cool in the tins for a few minutes then turn onto a wire rack.
5. To make the glaze gently heat the honey in a small pan and brush over the cooled teabread.
I love a good banana bread and I love the sound of the honey glaze :) I don't think the sides are overcooked at all - my favourite on banana bread is when the sides are a little brown (adds to the flavour)!! xx
