Recipe | New York Style Crumb Cake



So if you know me, you'll know I'm a massive fan of Cake Boss! I see him making crumb cake a lot on the show and I've always wanted to try it, it isn't really a thing here in the UK, so much so that I couldn't even find a recipe that wasn't in cups! But I always thought it looked so delicious that I thought I would give it a go, also this was my first time using cups and it's super easy! I wish we used them in the UK. Anyway I'm going to be that really annoying person and not convert the measurements, but I would really recommend buying a set of measuring cups if you don't have any, they're super cheap and definitely come in handy! 

Ingredients - 

For the Sponge - 

1 1/2 cups plain flour
1/2 cup caster sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt 
1 egg
1/2 cup milk
2 tablespoons vegetable oil
2 teaspoons vanilla extract

For the Crumbs - 

2 1/2 cups plain flour 
1 cup light brown sugar
1 1/2 teaspoons cinnamon
1 cup unsalted butter 

Icing sugar for dusting 

Method - 

1. Preheat oven to 160 degrees C, grease and line a 9x12 inch baking tray. 

2. In a medium bowl sift together 1 1/2 cups flour, caster sugar, baking powder and salt, set aside. 

3. In a separate bowl whisk together egg, milk, oil and vanilla. Fold the dry ingredients into the egg mixture. 

4. Spread batter into the prepared tin and even out. In a medium bowl combine remaining 2 1/2 cups flour, brown sugar and cinnamon. Pour melted butter over the flour mixture and toss with a rubber spatula until large crumbs form. 

5. Sprinkle crumbs over batter. Transfer tray to oven and bake for 10 minutes, then rotate the tray to allow the cake to bake evenly. Bake the cake for another 10 minutes until a skewer inserted comes out clean. 

6. Transfer to a wire rack to cool and dust with icing sugar. Cut the cake into squares, can be kept in an air tight container for up to 3 days. It goes amazingly well with a cup of tea or coffee!
