Hi guys, as Valentine's Day is fast approaching I thought I would do a themed recipe. I chose to make 7 layer bars with red velvet to give it that Valentine's feel! I think this is a lovely little treat to make for a loved one, or even just for yourself! These 7 layer bars are super yummy and easy to make, I found the recipe from Sally's Baking Addiction!
Ingredients -
150g Plain Flour
1 tbsp Cocoa Powder
1/2 tsp Baking Powder
Pinch of Salt
115g Unsalted Butter
150g Sugar
1 Egg
1/2 tsp Vanilla Extract
1 tbsp Red Food Colouring
120g Desiccated Coconut
100g Milk Chocolate Chips
100g White Chocolate Chips
1 397g Can of Condensed Milk
100g Chopped Pecans
Mehod -
1. Set your oven to 180 degrees C. Grease and line an 11x7 inch baking tin.
2. Whisk flour, cocoa powder, baking powder and salt in a large bowl until combined, set aside.
3. In a separate bowl mix butter until soft, add the sugar and beat until fluffy and light in colour.
4. Beat in an egg and vanilla extract. Beat in food colouring until combined.
5. Slowly mix the dry ingredients into the wet ingredients. The red velvet dough with be thick and sticky.
6. Using a rubber spatula spread the mix evenly in the prepared tray, as it is very sticky it will take a while to get it spread into the corners.
7. Bake in the oven for 8 minutes, then remove but leave oven on.
8. Sprinkle over the coconut, followed by both flavours of chocolate chips. Pour the condensed milk evenly over the top, sprinkle with pecans.
9. Bake for about half an hour, then leave to cool on a wire rack for at least 2 hours to make sure it is set.
10. Cut into squares, can be kept in an airtight container for up to 3 days.
