This recipe comes from one of my Primrose Bakery books. It's super yummy and great for Summer, really easy to make so could easily be taken to picnics etc!
Makes 12-15 pieces
Ingredients -
For the base -
230g unsalted butter
1 x 397g tin condensed milk
250g desiccated coconut
400g ginger nut biscuits (or whatever you like!)
Juice and zest of 1 orange
For the icing -
30g unsalted butter
275g icing sugar
1 teaspoon water
Juice of 1 orange
Method -
1. Grease and line a 33x22 cm baking tray.
2. Melt the butter and condensed milk in a pan over a low heat.
3. Put the biscuits in a sealed bag and crush them with a rolling pin.
4. In a bowl combine the biscuits, coconut, orange juice and zest with the butter and condensed milk.
5. Spread the mixture into the baking tray and press down evenly. Put in the fridge to cool before icing.
6. To make the icing, beat all the ingredients except the orange juice together. Add the juice a little at the time.
7. When the base is cold pour icing over the top and return to the fridge. Once set cut into pieces and serve.
