For the last couple of months I've been making a real effort to not eat as much refined sugar, that means scouring the web and my cookbooks to find healthy alternatives, which for a sweet tooth like me isn't easy! I found this recipe on Livia's Kitchen, which was made with almond butter instead of cashew, but they're both very similar, in taste and texture.
These flapjacks are super easy to make and feel like a real treat, I love saving them to have at night with a cup of tea! You can also try my recipes for Banana Muffins and Cacao Granola!
Makes 9 squares -
Ingredients -
100g Smooth Cashew Butter
75 ml Maple Syrup
50g Honey
70g Coconut Oil, melted
Method -
2. Mix all the ingredients together in a large bowl.
3. Pour the flapjack mix into the tin and flatten with a spatula.
4. Bake for 15-20 minutes until the top is golden brown.
5. Slice into 9 squares and then allow to cool fully before removing from the tray.
