I feel like the first time I tried Chia Seed Pudding it was like an epiphany! I never thought I would be one of those people that eats stuff like this for breakfast, but with my healthy eating kick in full swing I decided to give it a go and it's super easy! I'm obsessed with the texture, it makes it feel naughty but it totally isn't, they're great for preparing the night before if you're in a rush!
Chia seeds aren't the cheapest seeds around, I actually found a pack in Home Bargains so keep your eyes peeled, they're just the same as the ones I've got from Holland & Barrett. I decided on the cacao version but I've also tried plain with vanilla extract and that's super yummy too, especially with strawberries!
Makes one jar -
Ingredients -
1/4 cup chia seeds
1/4 cup cacao powder
2 tbsp maple syrup
1/2 tsp ground cinnamon
1/4 tsp salt
Toppings (optional) -
Banana
Coconut cream
Method -
1. Add all ingredients except sweetener to a mixing bowl and whisk vigorously to combine. Sweeten to taste with maple syrup.
2. Let rest covered in the fridge overnight or at least 3-5 hours (or until it's achieved a pudding-like consistency).
3. Leftovers keep covered in the fridge for 2-3 days, though best when fresh. Serve chilled with desired toppings, such as fruit, granola or coconut whipped cream.
This might sound like a daft question but do the seeds go mushy when they've been soaked or do they stay crunchy?
