Recipe | Easter Hot Cross Bun & Butter Pudding


So for my final Easter recipe of the year and it's a delicious one! Don't forget to check out my Easter Bark and Chocolate Fudge Easter Nest recipes! It's Easter Sunday in a couple of days and I wanted to give you an idea for any leftover hot cross buns you might have with this Hot Cross Bun & Butter Pudding! I love these kind of puddings, I've made ones with Pandoro, croissants and brioche before and this one is just as delicious and very seasonal! I'm not the biggest fan of raisins so I had to chuck a load of chocolate chips on! 


Ingredients - 

5 hot cross buns
25g butter
75g dark chocolate chips
2 large egg
150ml milk 
100ml double cream
1tbsp caster sugar

Method - 

1. Preheat the oven to 170°C, 150°C Fan, 325°F, Gas Mark 3.

2. Cut the hot cross buns in half and butter the cut sides, sprinkle with half of the chocolate chips, sandwich together again and place in a baking dish.

3. Beat the egg, milk, cream and sugar together and pour over. Scatter with the remaining chocolate chips and bake for 30-35 minutes until just set.
