I think lime and coconut in a cake is the epitome of a Summer bake! I think it looks so cute on my little picnic serving plate! I'm so pleased with the way this cake turned out, the sponge is so light, the sticky glaze and crunchy lime sugar topping is the perfect partner! The coconut gives it a lovely creamy taste, so so yummy! It's like a sexy, tropical lemon drizzle cake!
Ingredients -
For the sponge -
100g butter, softened
175g self raising flour
1 tsp baking powder
175g caster sugar
2 eggs
1/2 400ml can coconut milk
finely grated zest of 2 limes
For the topping -
1/2 400ml can coconut milk
100g caster sugar
finely grated zest of 1 lime
juice of 3 limes
Method -
1. Preheat the oven to 180 degrees C/Gas Mark 4. Grease and line a 900g loaf tin.
2. Beat together the butter and sugar, add in the eggs and mix until combined.
3. Fold in the flour and baking powder and stir in the coconut milk and zest.
4. Tip into the prepared tin and smooth down. Bake for 40 minutes until golden on top and a skewer inserted in the middle comes out clean.
5. For the topping add the coconut milk and 50g of the sugar into a pan, boil for 5 minutes until syrupy in texture. Stir in the lime juice and set aside.
6. In a separate bowl mix the remaining sugar and lime zest.
7. While the loaf is still warm in the tin, pour over the syrup a little at a time, leaving it to soak in. Leave the cake to fully cool then turn out and sprinkle over lime sugar, slice and enjoy!
