A few weeks ago before I started my health kick (for the millionth time) I baked some white chocolate pecan blondies, this was the first time I've baked blondies and I thought they turned out really well. This recipe was from one of my favourite books, The Hummingbird Bakery Cookbook. It's so easy without many ingredients, I would definitely recommend giving it a go!
Ingredients -
150g White Chocolate, Roughly Chopped
125g Unsalted Butter
150g Caster Sugar
2 Eggs
1 1/2 tsp Vanilla Extract
200g Plain Flour
Pinch of Salt
120g Shelled Pecan Nuts, Chopped
Makes 12 Squares
Method -
1. Preheat the oven to 130 degrees C/Gas Mark 3. Grease and line a square baking tray.
2. Put the chopped chocolate and butter into a microwavable bowl and melt in the microwave.
3. Add the sugar to the melted mixture and stir until incorporated. Add the eggs and vanilla extract stirring briskly so that you don't allow time for the eggs to scramble.
4. Add the flour, salt and chopped pecan nuts and stir until well incorporated and the nuts are evenly dispersed.
5. Spoon the mixture into the prepared baking tray and bake in a preheated oven for about 35-40 minutes, or until golden brown. Leave to cool completely then cut into squares.
