Recently I picked up the new Hummingbird Bakery Book Life is Sweet and it's just as divine as the other, some gorgeous recipes, I can't wait to visit the real bakery in London next week! I decided to make the Caramel Choc Chip Cookie Bars, they taste just as good as they sound!
Makes one 9x13 tray
Ingredients -
350g plain flour
1 tsp baking powder
3/4 tsp salt
295g softened unsalted butter
500g soft light brown sugar
4 eggs
2 1/2 tsp vanilla extract
150g chocolate chips
150g soft caramels, chopped (I used eclairs)
55ml double cream
Method -
1. Preheat oven to 175 degrees C. Grease and line a 9x13 inch baking tray.
2. Mix flour, baking powder and salt together in a bowl and set aside.
3. In a separate bowl cream together butter and sugar until light and fluffy.
4. Add the eggs one at a time, scraping down the sides of the bowl after each addition. Add the vanilla extract and mix.
5. Add the flour mixture to the egg mixture in small amounts, mixing well until incorporated. Add the chocolate chips and mix. Stir the batter into the prepared tray and set aside.
6. Place the chopped caramels in a microwavable bowl along with the cream, put in the microwave in short blasts, stirring until melted together. Pour the melted caramel over the batter and even out with a spatula.
7. Bake for 30 minutes then cool for at least 1 hour before cutting into bars.
These look delicious, shame they aren't suitable for vegans though :) xx
