If you read my blog you'll know I'm a total baking fiend, I'm totally obsessed and recently I've been dabbling in making substitutes for refined sugar and they're still super yummy. Recently BuySend offered me the chance to pick something to review from their website (they have everything!) and the keen baker that I am, I couldn't turn the cute set of farm animal shaped cookie cutters down! Unfortunately I can't find the exact set on the website but there is a very similar Leaf Shaped Set.

 Before we get to the recipe I'll tell you a little about the set. It comes in a metal tin which is super convenient for storage, I find cutters get lost so easily in kitchen drawers! The set comes with 6 different shapes, the are all the same size, relatively small but cute, there is a chicken, duck, cow, pig, sheep and horse. These are some of the best cutters I've used, they cut seamlessly and the dough came away intact, so I would definitely recommend them, although BuySend do a lot more shaped cutters!

Makes 20-36 biscuits (depending on cutter size!)

Ingredients - 

125g butter
120g honey/maple syrup
1 egg white
27g plain flour (I used rye flour)
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp mixed spice 

1. Preheat oven to 180 degrees C, line a baking tray with greaseproof paper. Melt the butter and honey/syrup together until bubbling. In a separate bowl whisk egg white until frothy. 

2. In a large mixing bowl combine flour and spices with butter and honey/syrup mix, add in egg white and stir until combined. Knead together for a few minutes into a firm ball, put in the fridge to cool. 

3. On a floured bench roll out the dough to a thickness of 3-5mm and cut into desired shapes (I obviously used the animal cutters!), place them onto a baking tray and baked for 8-10 minutes until golden brown. Enjoy!
