Recipe | Chocolate Chip Banana Loaf with a Caramel Glaze


I'm a sucker for a banana loaf, something about it I just absolutely love and I could never get sick of. I like mixing it up a bit so I decided to add choc chips to my banana loaf and also a caramel glaze, which is so so good! It's such a good way to use up overripe bananas, not to mention totally delicious. It's a super easy one to knock up, really fuss free, no bells and whistles just really tasty. 

Ingredients - 

For the loaf - 

115g butter, softened
3 overripe bananas
150g light muscavado sugar
2 eggs
225g self raising flour
1 tsp baking powder
2 tbsp milk
100g milk chocolate chips

For the glaze - 

85g light muscavado sugar
30g butter
40ml double cream
30g icing sugar

Method - 

1. Preheat the oven to 180 degrees C, grease and line a loaf tin. 

2. Mash the bananas and set aside. Cream together butter and sugar in a large bowl, add the eggs with a small amount of flour with each one, mixing after each addition to avoid curdling. 

3. Add the rest of the flour, baking powder and milk and mix thoroughly. Stir in the bananas and choc chips. 

4. Bake for 1 hour until a skewer inserted in the middle comes out clean. 

5. Leave to cool in the tin for 10 minutes before turning out on a wire rack. 

6. To make the glaze put the butter, sugar and cream into a pan and heat gently. Let it boil for about a minute then allow to simmer for 2 minutes, remove from the heat and stir in the icing sugar. Let the glaze cool a little then spread over the loaf while still warm.
