Recipe | Kentucky Brownie Bomb Bars


If a brownie wasn't already good enough, add marshmallow and chocolate covered rice krispies and you've got Kentucky Brownie Bomb Bars! I haven't had Easter nest style chocolate rice krispies in ages, licking the bowl was obviously a bonus too! The combination of the soft brownies, marshmallows and the crunchy topping is a match made in heaven! 


These are a little time consuming to make while waiting for things to cool, but they're super easy and really look and taste great! Also if you're on the hunt for marshmallow fluff for a reasonable price I found mine in B&M, you know I'm one for a bargain! 


Ingredients - 

185g unsalted butter
185g dark chocolate
85g plain flour
40g cocoa powder
3 eggs
275g caster sugar

1/2 jar marshmallow fluff

200g milk chocolate
100g rice krispies

Method - 

1. Preheat the oven to 190 degrees C/Gas Mark 5. Grease and line an 8x8 baking tin. 

2. In a microwavable bowl, break the dark chocolate into chunks and add the butter, melt in the microwavable and stir until smooth, set aside to cool. 

3. In a medium bowl whisk the eggs until light and fluffy. Pour in the cooled chocolate mixture and fold until combined. Add in the flour and cocoa powder and carefully fold in. 

4. Pour the mixture into the prepared tin and bake in the oven for 20-25 minutes until the top has a papery crust and there is a slight wobble in the middle. Leave to cool fully on a wire rack. 

5. Once the brownies are cool, put the fluff in the microwave for 30 seconds (this makes in easier to spread), using a rubber spatula spread a layer of fluff over the brownies. 

6. In a microwavable bowl, melt the milk chocolate, stir in the rice krispies until fully coated, spread the krispies mix over the fluff layer. Leave to chill in the fridge for at least 2 hours before cutting into squares.
