I think it's safe to say Spring is finally here! I've got my lovely daffodils and an equally lovely bake to go with it! Today I've got a recipe for Spice Apple Loaf with Brown Sugar Frosting, I'm not exaggerating here, that frosting will change your life! I could've eaten it from the bowl...
Ingredients -
Apple Loaf -
60g butter
180g plain yoghurt
65g dark brown sugar
130g granulated sugar
2 eggs
2 tsp vanilla extract
250g plain flour
2 1/2 tsp baking powder
1 1/2 tsp cinnamon
pinch of salt
1 large Granny Smith apple, peeled and diced
Brown Sugar Glaze -
170g dark brown sugar
60g butter
80ml double cream
60g icing sugar
Method -
1. Preheat oven to 180 degrees C. Grease and line a loaf tin, set aside. To make the loaf, in a large bowl, beat butter, yoghurt and both sugars until creamed. Add the eggs, one at a time, beating well after each addition. Add the vanilla and mix until combined. Set aside.
2. In a sperate bowl mix flour, baking powder, cinnamon and salt. Slowly mix the dry ingredients into the wet ingredients. Mix until well combined, mixture will be thick, fold in the chopped apple.
3. Spoon into prepared tin and bake for 55 minutes, cover the loaf loosely with tin foil halfway through baking to prevent the top from getting too brown. Allow loaf to cool completely in the tin on a wire rack.
4. To make the glaze, combine brown sugar, butter and double cream in a medium saucepan over a medium heat. Bring to a boil, stirring often. Allow to boil for 1 minute then turn down to low, allow to simmer for 1 minute. Remove from heat and whisk on icing sugar. Allow to cool for 3 minutes then spoon over the bed while it's still warm. Bread will stay fresh for up to 5 days in an airtight container.
