Valentine's Day Strawberry Oreo Brownies Recipe

You know I'm a sucker for a theme, so I thought with Valentine's Day coming up I had to create a recipe especially for it! I love Valentine's Day and I think baking a little treat for your loved one always goes down well! This year I decided to go for Strawberry Oreo Brownies, don't forget to check out my recipes from last year, Cherry Pie and Peppermint Candy Biscuits!

Valentine's Day Strawberry Oreo Brownies Recipe

These brownies are so decadent and delicious, perfect for the end of a Valentine's meal. The layers make the brownies look great and really special. A soft brownie base, oreo frosting and sweet sticky chocolate ganache makes for a delicious treat! The strawberry flavour in the brownies comes from the strawberry flavour oreos, although if you can't get your hands on them or don't fancy them they are just as tasty with regular oreos!

Valentine's Day Strawberry Oreo Brownies Recipe

Ingredients - 

For the brownies - 

2 eggs
115g unsalted butter
200g granulated sugar
2 tsp vanilla extract
21g cocoa powder
pinch of salt
95g plain flour

For the frosting - 

60g unsalted butter, softened
210g icing sugar
2 tbsp double cream
6 oreos, crushed (I used strawberry flavour)

For the ganache - 

100g milk or dark chocolate, whichever you prefer, broken into pieces
120ml double cream
2 tbsp unsalted butter

Method - 

1. Preheat the oven to 180 degrees C/Gas Mark 4. Grease and line an 8x8" tin with parchment, leaving an overhang to help lift brownies out. 

2. To make the brownies, in a small bowl, beat the eggs, set aside. Melt the butter in a microwavable bowl. In a large bowl mix the butter, sugar, vanilla, cocoa powder and salt. Then fold in the flour. Pour mixture into the prepared tin and bake for 20 minutes or until a skewer inserted in the middle comes out clean with a few crumbs. Leave to cool in tin for 10 minutes, transfer to a wire rack to cool completely. 

3. While the brownies are cooling, make the frosting. Beat the butter until light, add in the icing sugar and cream, mix until smooth and combined. Stir in the crushed oreos, make sure frosting is thick enough to spread. Spread the frosting over the brownies, allow to chill in the fridge while you make the gauche. 

4. To make the ganache, heat up the double cream in the microwave, about 1 minute until almost boiling. Pour over the chocolate in a heatproof bowl, stir until melted and combined, add in the butter and stir until melted and shiny, you may need to put it back in the microwave for 30 seconds if not hot enough to melt. Pour the ganache over the chilled brownies and spread to the edges, sprinkle over remaining crushed oreos if you wish. 

5. Allow brownies to chill in the fridge for at least 30 minutes before cutting to allow the ganache to set, cut into squares and enjoy!
